How coconut milk powder is made?
Our partners in Vietnam make our coconut milk powder by first making coconut milk by squeezing the coconut meat and extracting the milk. The coconut milk is dried at high temperatures in a large machine, which blasts the milk into a powder form.
If drying coconut milk powder was simply drying coconut product alone it would clump badly and be difficult to separate. Therefore, a very small amount of organic maltodextrin and organic gum acacia are added, simply to ensure the dried coconut milk is a fine texture when you come to use it. Other manufacturers will add all sorts of other anti-caking ingredients to their coconut milk plus sometimes up to 40% fillers, so do check. 97% of what’s in a container of our coconut milk powder is directly from the coconut itself. We often get asked if you can produce a 100% coconut milk powder. The answer is yes, but it needs to be freeze dried and the cost is very high, making the end product too expensive for food manufacturers to use in any volume.
How can you use coconut milk powder?
Coconut milk powder really does have its place in the kitchen. Try it in the strawberry milkshake recipe above, or enjoy a smooth and creamy coconut, raspberry and walnut porridge, or indulge in a hearty coconut, sweet potato, spinach and chickpea curry.
Really, wherever a recipe uses coconut milk, you can reach for your trusty supply of coconut milk powder. Simply make it up to the desired consistency using warm water and you can use it as directed in a recipe.
Why choose organic coconut milk powder?

When you choose an organic product, you know that it’s only gone through organic processes from start to finish. This means that the individual coconut farmer who supplies coconuts to the factory for making coconut milk powder, farms in an organic way. They don’t use artificial pesticides or fertilisers. Therefore, these cannot leach into the coconut in any way. Annual pesticide tests from the coconut confirm this each year.
For many, it matters that they can choose organic. For some products, choosing organic is more important. For example, it’s particularly worthwhile to choose organic when buying certain soft fruits like cherries and strawberries. Other food items, particularly meat, are much better for you when they are organically produced.
The difference between organic and not-organic is not so marked with coconut products, particularly those that come from the coconut itself. However, ensuring that individuals can make the choice for themselves is what drives us to produce both organic and standard (conventional) coconut milk powder. Standard coconut milk powder is understandably slightly cheaper than organic coconut milk powder.
If you choose organic coconut milk powder, also take note that the stabilisers used are also organic. For example, we use organic maltodextrin and organic gum acacia.

Why else is organic coconut milk powder good?
Many of us are used to grabbing cans of coconut milk in the shop. However, whilst ingredients must be listed, what the ingredient list doesn’t tell you about is the nature of the can. Cans are usually lined in order to further preserve their contents. This lining is plastic based, containing BPA. Many individuals avoid BPA because it’s been linked with health problems due to it being an endocrine disruptor.
Additionally, canned sources of coconut milk and coconut cream also often contain sulphites. These are used as preservatives. Again, many people try to avoid or limit sulphites in their diet.
